Green Onion (Chopped)

Lite Soy Sauce
1⁄4 c
Thai Sweet Chile Sauce

carrot matchsticks (for filling)
1 oz
cucumber (for filling)
1 oz
Snow Peas (for filling)
1 oz
Green Bell Pepper (for filling)
2 oz
Hot House Tomato (for filling)
2 T
fresh basil (Chopped, for filling)
2 T
Fresh Mint (Chopped, for filling)
3 T
Fresh Cilantro (Chopped, for filling)
lime (for filling)
Heads Limestone or Butter Lettuce (for filling)
Jar of Chinese Plum Sauce (for filling)


MARINATED CHICKEN: Peel and chop ginger root. Chop garlic. Zest half of the orange, cut orange in half and squeeze the juice into a bowl. Add remaining ingredients to the bowl and mix well. Add chicken meat and refrigerate for 4 hours. Cook chicken on a barbeque or char-broiler until done. Chill, julienne and set aside.

FILLING: Peel and julienne cucumber. Cut tomatoes in quarters, remove pulp and julienne. Julienne snow peas and green bell pepper. Cut lime in wedges. Wash lettuce and pull apart, separating leaves. Arrange all ingredients attractively in bowls and on plates (see photo).

FAMILY STYLE SERVICE: For family style service, each member selects the ingredients of their choice and mixes them in their personal bowl. The ingredients are rolled up in a lettuce leaf and eaten like a taco.
